Turnip Soup ( Vegan Version )

My mom loves Turnip very much and I remember whenever we got cold or flue, she ran to the store and get a bag of turnip and simply boil it and serve with salt, pepper and lime. She said ” eat this, this will kill all the germs like a miracle.” The boiled one doesn’t smell good so I usually add it to soup.

It’s been chilly these days here in Orlando which is not common here, but for me is kind of joyful and remind me the cold city  ( Toronto ) that I used to leave for many years. So I went for a walk and I when I get back home I thought it’s a good day to make a hot soup.

Turnip is rich in nutrients and low in calories. High amount of fiber and vitamin C and I believe it a good cold and flu prevention.

This soup is a very healthy, tasty tick soup. It’s a mix of beans with beef stock and definitely turnip. It’s usually hard for me to make a small pot of soup but you can reduce the ingredients amount for smaller portion.


4 cups vegetable broth ( home made or from store )

1 cup chopped cilantro

1 cup chopped parsley

1 bunch of chopped spinach

1/2 cup chopped kale

3 stems of green onion

1 can of mixed beans

1/4 cup rice

1/2 cup lentil

1 big turnip

1 big tomato

1/2 tbsp tomato paste

1/2 tbsp all purpose flour

Turmeric, Salt & pepper to taste

Preparation time: 20 minutes

Cook time: 30 minutes

Total time: 50 minutes

Servings: 6 people

How to make

For this amount of soup I used half a bunch of cilantro, half bunch of parsley.

  1. Wash all the vegetables and chop them
  2. In a big pot bring a cup of water to boil and add the rice. You can use canned beans and save the time but I personally cook all the beans with pressure cooker and I cook the rice and lentil desperately as they cook faster.
  3. Chop the tomato
  4. Cut the turnip to small pieces ( half inch cubes)

  6. Add all the ingredients in the pot that you already cooked rice and to make it tick in half a cup off cold water add flour and tomato paste and mix it and add it the soup. Simmer it and leave it to cook for about 20 minutes.


If you want to add some acid you can serve it with lime or plain yogurt.

Optionally, garnish with yogurt, Caramelized onion and fried mint.
