Sun-Dried Tomato Chicken

I always have a small jar of sun-dried tomato in my fridge for pizza topping, omelette or sun dried tomato soup, but last time I bought a big jar of that preserved in olive oil from Costco, and as you know all  product comes in big amount in Costco, and Since I don’t like to waste any food I need to make more recipes with that. This time I decided to make chicken with sun-dried tomato. This food goes well with pasta, rice, bread, steamed vegetables or even salad.

Ingredients

Boneless chicken thigh or breast  ……………. 4-5 pieces

Onion …………………………………………………… 1 medium

Sun-dried tomato in oil ………………………….. 1 cup

Garlic …………………………………………………… 3 cloves

heavy cream …………………………………………. 1/4 cup

Turmeric ……………………………………………… 2 tsp

Mix spices of, Paprika, cyan pepper, chili powder, cumin, salt and pepper

Basil for derving

Parmesan or cheddar cheese for serving

How to make

  • Heat 2 tablespoons of oil in a large skillet over medium-high heat. Once the skillet is hot, place chicken in the skillet, add turmeric and cook for 4 to 5 minutes on each side, until golden.
  • Meanwhile in food processor blend sun-dried tomato.

  • Add mixed spices and put it aside.  Sauté minced onion and garlic in the same pan and add turmeric and oil if needed until golden.

  • Add seared chicken and blended sun-dried tomato to onion and simmer.
  • Add a cup of water , salt an d pepper and let it cook.

  • When it’s cooked and thickened add cream and simmer.

  • Add some chopped basil and cheese for topping

Notes

  • If you are making this food for low carb diet, use sun-dried tomato not in oil.
  • Instead of cheese use 2 tbsp rice flour that mixes with cold water to make it creamy.
