Carrot Rice ( Havij Polo )

If you like sweet food you should try this rice. It’s a combination of carrot and chicken layered with rice and of course in a pot or baking pan to make tahdig.

Ingredients

Boneless chicken thigh or breast  ……………. 1 lb

Onion …………………………………………………… 1 medium

Carrot ………………………………………………….. 3-4

Soaked saffron ……………………………………….. 3 tsp ( optional )

Oil ……………………………………………………….. for cooking

Turmeric ………………………………………………. 3 tsp

Mix spices of, cumin, cinnamon, paprika, cumin, salt and pepper

 

How to make

  • peel off the carrots then grate them.
  • Heat 3 tablespoons of oil in a skillet over medium-high heat. Once the skillet is hot, fry grated carrot with some salt and turmeric until golden and put it aside.
  • In the same skillet heat up some oil and fry the onion with some salt and turmeric and put it aside.
  • Cut the chicken to small cube and fry them in the same skillet with some oil, turmeric and salt until golden.
  • Add carrot and onion to the chicken and fry them some more minutes with all spices and soaked saffron and put it aside.
  • prepare rice in a pot like Persian rice ( http://cruisinculinary.com/persian-rice-chelo/ ) to the end of stage one.
  • in a large pot or baking pan ( your choice depends on your presentation ) put 5-6 cooking oil, salt and soaked saffron. put something for tahdig. You can put sliced potato, or lavash bread or the rice itself. load the dish with layers of rice and carrot mix like one layer rice, one layer mix and repeat.
  • if you are using pan, cover the lid with some bounty or cotton napkin and put it on the pan and cook it on medium-low for about 30 minutes, but if you are using baking pan, cover it with aluminum foil, make some hole on it and bake in the oven on 400f for 40 minutes.
  • When its cook flip that in a serving dish.

 

Notes

  • a perfect side dish for this food is mix pickle, yogurt and fresh herbs.
