Persian Hash Brown ( Kuku sibzamini )

I know hash brown is part of the US cuisine and it’s considered a breakfast food and it is almost in all brunch menu, but in Iran we serve it for a light dinner or breakfast with bread and fresh herbs.

I admit the Persian style hash brown is one of the best and it’s because of ingredients. It’s a simple potato dish in which potato is grated and mixed with spices and egg and then pan fried. Some boil the potato first and then grate it, but this version sucks to much oil. It depends on your taste, you might like it thick, or mushy or crispy. This recipe gives you best crispy hash brown.

Ingredients

Gold or Yellow Potato ……………. 3 big

Onion ………………………………….. 1 medium

egg ………………………………………. 1

Turmeric …………………………….. 3 tsp

Cinnamon……………………………. 1/2 tsp

Origano ………………………………. 1 tsp

onion powder ………………………. 1 tsp

Salt and pepper…………………….. to taste

Oil……………………………………….. for cooking

How tomake

  • Peel potatoes, and grate on the medium holes of a box grater. Place grated potatoes in a clean kitchen towel, and squeeze tightly, removing all excess moisture or squeeze with hand ( that’s what I do ).
  • Peel and grate onion with the same box grater and add to potato.Add washed lentil and fried onion and stir in oil.
  • Add egg, turmeric, cinnamon, onion powder, origano, slat and pepper.
  • Heat a non-stick pan in medium-high, and add canola oil.
  • With a spoon make a small circle in pan and press it to make it tin.

Notes

  • You can grate with small hole and add more eggs to make a thicker hash brown, but you need to put the lid when you cook for one side and cook the other side without lid.
  • The best side for this food is feta cheese and fresh herbs. Some people like it with mixed pickle or yogurt.
