Sliced Eggplant Patties ( Varagheh Badenjan )

This this is a perfect choice for eggplant lovers, vegetarian and also a good diet recipe. Everyone knows that eggplant sucks up so much oil but I give you a very good tip to control it. In this recipe you need to slice the eggplant like circles to half inch thickness. Salt them and wring them out after 20 minutes. Grilling is the best way to cook them with a minimum amount of oil. Eggplant still is in the list of low carb diet but of course has more carbohydrate and sugar compare to green vegetables, but there is some days in diet that you can pass the limit a little bit, like this food. You can have a whole egg mean with yoke every two days so this recipe has. My vegetarian friend love this patty.

Ingredients

Green Onion ………………………………………1 stalk

Grape Tomato ……………………………….……5

Turmeric  ………………………………….………2 tsp

Onion Powder ……………………………………1/2 tsp

Cinnamon …………………………………………1/2 tsp

Canola oil …………………………………………1/4 cup

Salt & Pepper ……………………………….……to taste

How to make

  • Peal the eggplant like striped.

  • Slat them and wring them after 20 minutes.
  • In a small bowl mix the oil with turmeric and pepper ( eggplant is already salty ) .
  • Brush the eggplant slices with oil and grill them.

  • Grill a stalk of green onion and slice it and put it aside.
  • Caramelize the onion in oil and turmeric and put it aside.
  • While grilling eggplant in a bowl whisk the one egg, egg white, turmeric, cinnamon, onion power, salt & pepper.

  • Arrange the grilled eggplant in a pan and heat it up to medium.

  • Pour in egg mixture, grilled green onion, caramelized onion and tomato to the pan and put the lid on.

  • When egg is cooked put the pan aside.

Note

  • You can flip them to grill the other side but without that looks better.
  • It can be served with tanoori bread, pickle and fresh herbs.
  • For non diet recipe you can pan fry the eggplant and instead of egg white use the whole egg and thicker layer.
