Cod Fish with Quinoa

Fish is one of the best source of protein in low carb diet. It cooks fast and has no fat. My family don’t like steamed or just baked fish. Our traditional way is pan fried and crispy but as I don’t want to use too much oil in my cooking I grill them to crispy texture. In this recipe I use fish as tahdig ( Crispy part of rice ) but not with rice, with quinoa. You try it you will love it.

Ingredients

Wild Cod fish ……………………………………2 pieces

quinoa ………………………………1/2 cup

Olive oil or canola oil …………………………….…………2 tbsp

Signature sauce

Marinade mix…..paprika, chili powder, onion powder, garlic powder, sumac (optional), Golpar/Heracleum persicum (optional),, salt & pepper, apple cider vinegar, olive oil.

How to make

  • Cook quinoa in a pan with water and a pinch of salt.
  • mix all the seasoning and spices in a small bowl.
  • add olive oil and apple cider vinegar to that and mix.
  • marinade the fish in them.
  • brush a small baking pan with oil and place the fish in the bottom.

 

  • Add a spoon of olive oil to cooked quinoa and put on the top of fish and cover with aluminum foil.
  • Place it on the grill or hotplate.
  • I cook it on the grill with some vegetable marinaded with my leftover sauce.

  • Serve it with grill vegetables and herbs.
